Chocolate and Marshmallow Fridge Cake
I found the recipe for this in a Sainsbury's Magazine about a year or so ago. Made it once and vowed never to make it again. It lasted less then 2 hours. We were pigs. Big pigs. My son was the worst culprit and he's been begging me to make this again, ever since.

I have marshmallows and macadamias and I quite like him at the moment, so thought "Why not?" The Hazelnut Squares are all but gone, and it's nice to have something lurking in the background to satisfy those sweet tooth cravings.... of which we have many.

I can't help but think back to when my brother and I were kids, and our mum used to bake every Wednesday of our lives. My brother pointed out a few years back, that on those days we just couldn't win... if we loved what she'd baked we'd eat it all rather quickly - in which case she'd vow never to make it again because we were greedy.. ooooorrrr we didn't like what she'd baked and didn't touch it... in which case she'd vow never to make it again because we were ungrateful.

There was a kind of twisted logic in that.

I think I'm turning into my mum.

Makes 20 - 25 bars

Prep time - 10 minutes
Chill time - 3hrs

You will need
A large bowl
A 20cm square baking tin/dish
Cling film

Ingredients
300g dark chocolate - roughly chopped
100g milk chocolate - roughly chopped
2 tbsp runny honey
100g butter
110g macadamia nuts (or hazelnuts) - chopped roughly
110g digestive biscuits - chopped roughly
110g mini marshmallows

Method
Use the cling film to line the baking tin. It'll make it easier to remove the cake once it's chilled.


In the bowl, place the plain and milk chocolate, the honey and the butter and melt on 50% power in your microwave for about 3 minutes. Checking it every minute and stirring it to prevent crystallisation... OR melt it all over a gently simmering saucepan of water.


Once melted add the nuts, biscuits and marshmallows and mix gently to combine it all and smother it in the chocolate.


Spoon into the baking tin and level the top as best you can. Place in the fridge for three hours, or until solid.



Turn out onto a chopping board, remove cling film and cut into bars...

Go to your local hardware store and buy a padlock and chain. Chain yourself as far away from the cake as possible. Padlock it. Swallow the key.

  4. Just made this DELICIOUS! although I doubled the amount of biscuits to have instead of the nuts... even more unhealthy but wow so yummy ahah :)

  5. I was watching Gordon Ramsay's Home Cooking and wanted the recipe for the fridge cake and when I googled your blog came up and I prefer your version. I'll be making this for my kids school fair and I;m sure have to get a padlock and chain to make sure my family won't touch it lol hugs Ildiko
