* Pita Pizzas

Pita Pizza Recipe
I'm always struggling to find ways to use up fresh food... before it's no longer fresh... and these little pizzas fulfil several agendas. They're quick and easy, you can design your own topping, they use up leftovers and almost everyone loves them.

I say almost, because I have "A Josh". I think we all have one somewhere within our families. Mine doesn't like pizza... I am constantly checking his birth certificate to make sure he is mine.

I don't know about the rest of you, but I fight a constant battle between what I want to eat, what I have to eat, and what time I have to cook. I'm not the worlds most organised individual so I'm often scrabbling around at the end of the day for something half decent for us to eat, that I can put together fairly quickly and bung on a plate with a wodge of salad (or not).

I have the best of intentions in the morning, but come late afternoon and evening I've usually lost the plot. It's a personality defect that my nearest and dearest tolerate with aplomb. Today, for instance, I had fully intended to get up early, get my jobs done, walk the dog, cook stuff, blog stuff, sit in the garden and contemplate the importance of being.... then walk the dog, cook more stuff...

...I've walked the dog and... *sigh*. I've walked the dog. That's it.

OH!... and watched a film.

You can see why a meal as quick and easy as pita pizza, comes in handy occasionally. You can use any type of pita bread, but I prefer circular wholemeal ones and of course, you can make up your own toppings depending on what you have available. 

I've given you a couple of ideas below, but have at it!

Pita Pizzas Recipe

1 pita pizza per person usually works out just about right.

Prep time - 5 minutes
Cooking time - 10 minutes
Total Time - 15 minutes

You will need
A Pizza Pan or oven try for each pizza.

Ingredients
Hawaiian Pita Pizza
1 pita bread
2 - 3 heaped tbsps pizza sauce/marinara sauce
Small handful of grated Cheddar Cheese
1/2 pineapple ring cut into chunks
25g/1oz chopped ham

Chorizo and Pesto Pita Pizza
1 pita bread
2 - 3 heaped tbsps pizza sauce/marinara sauce
Small handful grated Manchego Cheese
1 tbsp basil pesto
25g/1oz chopped spanish Chorizo sausage

Method
Preheat the oven to 370f/190c/fan170c/gas 5

Hawaiian Pita Pizza
Place the pita bread on the pizza tray. Spread the pizza sauce over the pita with a spoon, scatter over the grated cheddar, pineapple and ham - cook in the oven for 10 minutes or until cheese is melted and bubbling.

Chorizo and Pesto Pita Pizza
Place the pita bread on the pizza tray. Spread the pizza sauce over the pita with a spoon, scatter over the grated Manchego, dot the pesto here and there than scatter over the chopped chorizo - cook in the oven for 10 minutes or until cheese is melted and bubbling.

  1. Abbe, you're a genius!!! I saw some pita breads the other day but didn't buy it because I was thinking - "Doesn't look like it'll be a hit in my household"..lol! But this looks so delicious and you've given me a ton of ideas! ^.^

    1. Hah! Sharon, I've been called many things, but never a genius - I think I like it :0D

      I don't blame you for not seeing a point to pita - I have an issue with pita breads not splitting open without tearing apart, so sticking something on them, instead of in them, works a treat ;-)

    1. Hi Krul - I used Warburton's Soft Brown Sandwich Pitas. They're about 12cm in diameter. I think.
