* Choc Chunk Rock Drops

I tried sooooooooooooooo hard not to eat one of these straight out of the oven.... Just not quite hard enough, and now my tongue is feeling a little bit delicate because of a HUGE chunk of melted chocolate that found it's way onto the end of it with absolutely no help from me, whatsoever.

It was worth it though.

Even if I have to live on ice cream for the rest of the week (oh woe is me).

Josh happened to mention that I tend to bake something sweet when he's gone to his nan's for the weekend, and would I mind doing it a bit earlier in the week and please could I butter his crumpets because he was getting it everywhere and make him a cup of tea... hmmmm.

We don't have a swear box because I'd never have any money.

We do - however - have Rock Drops and I've no idea why I don't make them more often. They're SO easy to make and SO easy to eat...

I just answered my own question... didn't I.

Makes 8

Prep time - 5 minutes
Cooking time - 15 - 20 minutes

You will need
A bowl or a kenwood chef/kitchen aid
A baking sheet lined with baking parchment (or lightly greased)

Ingredients
200g plain flour
2 tsp baking powder
100g butter - cut into small pieces
75g granulated sugar
100g plain chocolate - cut into chunks
1 egg - beaten
2 tbsp milk

Method
Pre heat oven to 180c/160cfan/350f/gas4

Sieve together the flour and baking powder into the bowl of your chosen weapon, add the butter. If doing this by hand, rub the flour and butter together until the mixture resembles fine bread crumbs - if using a kenwood/kitchen aid - use the paddle attachment to achieve the same.


Stir in the sugar and chocolate chunks, then add the beaten egg and milk and mix until a soft dough is formed.


Spoon 8 uneven rock shaped drops onto your lined/greased baking sheet and place in the oven for 15 - 20 minutes or until the tops are firm to touch when pressed with a finger.


Transfer to a cooling rack and allow to cool before eating... or be a pig and burn your tongue (they are seriously nommy when hot, just don't give 'em to your kids when they are (hot)... unless you don't like them (your kids)).



NOTE: It's very easy to double the batch to make more rock drops. I've no idea if these freeze well. They've never made it that far.

  1. I gotta stop coming on here- there goes another reason for me not to lose my post baby weight nearly 6 years later.BTW, those should freeze well, as I have made a fruit version of these and frozen them.

    1. I was tempted to make the fruit version, Em - but Josh and Neil don't like them and I'd have eaten the bloody lot if left in a room alone with them! Good to know that they do freeze, I may make a double batch next time... just to test my will power ;0)

      As for post baby weight - I've managed to hold on to mine for the past 21 years - it takes a lot of food to maintain a figure this huggable ;0D xx

  3. Oh, these were sooooo good! Just glad the recipe was only for 8 - very dangerous to make a double batch! They are halfway between a scone and a shortbread, but with added chocolate, what's not to like!
